Imagine a bowl of tender, warm lentils glowing with earthy orange from the carrot and fresh red and green from the tomato and spinach. The tangy sweetness of the tomatoes and vinegar dances on the tongue. The salty crumbled feta adds creamy pockets that melt lightly against the tongue, while the carrot and pumpkin seeds provide a satisfying crunch. Picture the colours and textures dancing together, the aroma of sautéed onions, garlic and herbs gently lifting from the pan, inviting you to pause and savour the meal before you even take a bite.
Prep/Cook: 15 minutes
Note: Eat until you feel comfortably satisfied — not too full, not still hungry. These amounts are flexible; leftovers can be shared, saved for another meal, or enjoyed as a snack.
INGREDIENTS
1 tbsp olive oil
1 small red onion, finely chopped
1 clove garlic, finely chopped
1 teaspoon dried or mixed herbs (oregano, rosemary - whatever you have available)
1 carrot, diced
6-8 cherry tomatoes, halved
1 x 400g can of lentils, drained and rinsed
1 tablespoon apple cider vinegar
Handful of fresh spinach or rocket
100g feta, diced or crumbled
Salt and pepper to taste
2 tbsp of pumpkin seeds, to scatter over the top
Method
Heat olive oil in a pan. Sauté the onion, garlic and dried herbs for 3–4 minutes until soft and fragrant.
Add the tomatoes, carrot, drained lentils, and vinegar, gently warming through for 3–4 minutes. The carrot should remain fairly crunchy.
Remove from heat and stir in crumbled feta and spinach/rocket. Season to taste.
Serve warm, sprinkled with pumpkin seeds. Take a moment to notice the textures, colours, and aroma before you dig in — enjoy the anticipation!
