overnight oats breakfast
I’m pretty obsessed with this overnight oats breakfast at the moment. It’s one of those bowls that ticks all the boxes for me: nourishing, satisfying, gently sweet, and incredibly easy.
INGREDIENTS
1 cup oats
1 tablespoon ground flaxseeds
1 tablespoon chia seeds
1 tablespoon almond nut butter
1 ripe pear, grated
½ cup frozen raspberries
1 teaspoon cinnamon
1 teaspoon vanilla extract
DIRECTIONS
Add all of the ingredients to a bowl, then pour over the milk of your choice — or simply add water (that’s what I do). You’ll need around 2–3 cups of liquid, depending on how thick you like it.
Give everything a good stir and either:
leave it overnight in the fridge, or
let it stand for 10–15 minutes in the morning (again… that’s what I do).
Why I Love It
It makes a really sizeable bowl and keeps me full for ages. I find it naturally sweet and satisfying, without needing to add extras like maple syrup or honey — I’d suggest trying it as it is first and seeing what you think.
The pop of raspberries, delicate pear flavour, warming cinnamon and vanilla, and the creamy density of the almond nut butter give it all the flavour it needs. Simple, comforting, and genuinely delicious.
