RECIPE (serves 1-2)
ingredients
1 tbsp olive oil
1 small onion or shallot, finely sliced
1–2 cloves garlic, crushed
1 tsp smoked paprika
½ tsp ground cumin
4-5 medium sized ripe, fresh tomatoes, chopped (or 1 x 400 g tin chopped tomatoes)
1 x 400 g tin chickpeas, drained and rinsed
Salt and black pepper
A handful of spinach or other tender greens
2–4 eggs
To Finish (optional but lovely):
Fresh herbs (parsley, coriander or basil)
Crumbled feta cheese
Extra olive oil
Method
Heat the olive oil in a wide pan over a gentle heat.
Add the onion and cook for 5–7 minutes until soft and translucent.
Stir in the garlic, smoked paprika and cumin and cook for 30 seconds until fragrant.
Add the tomatoes and chickpeas, season with salt and pepper, and simmer for 10–15 minutes until thickened.
Stir through the greens until just wilted.
Make small wells in the sauce and crack the eggs into them.
Cover the pan and cook gently until the egg whites are set but the yolks are still soft.
Finish with herbs, feta if using, and a drizzle of olive oil.
