RECIPE (serves 1)
ingredients
½–¾ cup cooked quinoa (see note below)
1 small cooked beetroot, sliced or cubed
1 handful mixed salad leaves or baby spinach
1 smoked mackerel fillet, flaked
2 tbsp walnuts, roughly chopped
Optional: pear slices
Dressing
1 tbsp olive oil
1 tsp lemon juice or apple cider vinegar
½ tsp Dijon mustard (optional)
Salt & pepper to taste
Quinoa note (optional but helpful):
Rinse ½ cup dry quinoa and cook with 1 cup water for 12–15 minutes, then fluff and cool
OR use a ready-cooked quinoa pack for convenience
Method
If using, cook quinoa according to the note and allow to cool slightly.
In a bowl, add quinoa, beetroot and salad leaves.
Flake the smoked mackerel over the top.
Add walnuts and optional pear.
Whisk dressing ingredients together and drizzle over the bowl.
Toss gently and enjoy.
